1/4 tsp. good quality, pure matcha (not sweetened or blended)
.75 oz. light agave syrup
.25 oz. fresh lime juice
6 medium mint leaves
10 oz. sparkling water
8 oz. ice
Place agave and lime juice in bottom of cocktail shaker. Add mint leaves. Bruise mint leaves with muddler to release essential oils into liquid. Sprinkle in matcha powder and stir into mixture. Add sparkling water, then ice, and stir gently. Pour into tumbler and enjoy.
